Just realized that we will be living in the birthplace of Buford Pusser, legendary lawman of the South. Yeah.

Our favorite meatloaf recipe.

This is a meatloaf I've been making a lot lately for David and myself. Try it!

Meatloaf:

This all began because I absolutely hate meatloaf (David loves it!)...I hate the texture mainly. I love the idea of it, but I can't stand the way it feels in the mouth. I basically took out all of the yucky texture ingredients and upped the onion to give the same moisture.

1. You'll need to estimate how much hamburger meat to use. There are only two of us, so we fill one small loaf pan with a little left over for lunch the next day.

2. 1/2 of a medium onion. Doesn't matter what kind. We use regular yellow onions. Don't skimp on this. Since we won't be using eggs or bread crumbs, the onion provides the moisture.

3. 2 cloves of garlic (pressed or minced).

4. Salt and pepper to taste.

5. Onion powder and meat tenderizer to taste.

6. Ketchup and some sort of Asian sauce. I use sesame garlic glaze.


-Mix everything up in a bowl. I use plastic gloves to do this part (Thank goodness David's a nurse and has powderless gloves around the house!), because it gets pretty disgusting and messy. The last thing I add in is about 2 tablespoons of ketchup. It adds flavor and helps keep the meat moist. I do the same thing when making hamburgers, except then I add ketchup and mustard!
-Preheat your oven to 350-375.
-Put mixture into loaf pan. We use a glass one. Top with a mixture of about 2 tablespoons ketchup and 1 teaspoon Asian sauce. You may have to play with this a little to get the right flavor.

Cook meat loaf for 30 to 40 minutes. Drain the liquids out of your loaf pan and make a cut in the center of the loaf to make sure it is done. If there is a little pink there, stick it back in the oven for a few minutes. You can even turn the oven off. The residual heat should finish the cooking for you.

Pink hair!


Told you I would update you on the process of my pink hair. I didn't end up needing to bleach more than one time. The color is a lot brighter in person than in the picture, and I like it a lot.
I tucked the highlights into my hair, so if I part it one way, the color is almost completely concealed. I originally had the very bottom layer in pink as well, but I ended up dying it black. I just didn't like the look of it.
I used Pink Fetish by Splat!, which I purchased at Walgreens for $9.99. The quality of the product was really good. Even after applying black hair dye (Balsam Lasting Color Creme in 618), I was still able to bleach to a really light color. The pink took very well and is pretty consistent throughout the whole length of my hair, which is nice.

New home!

Yes! You heard it right. After only two days of house hunting, we have found our rental home. David and I usually have pretty decent luck finding new places to live. We moved twice in Columbus, once to Tupelo, and now to Selmer, Tn. We found our first apartment and duplex in one day!

This not-so-little house sports 3 bedrooms, 2 bathrooms, a 2 car garage, and two fruit bearing trees. This photo was probably taken in the winter time, so it doesn't give an accurate look at the grounds. Everything is green and beautiful right now. The trees surround the house, and it is very shady and nice! We even have a horse pasture right behind the house/garage. It is lovely!

We'll be signing papers on this beauty tomorrow, hopefully, and we'll be moving in at the start of next week. :)

Black and (pink?) hair

Currently sitting with hair in foils attempting pink highlights in my newly black hair. We'll see. Probably going to need to bleach two or three times to make them pop. I hope they turn out. Will post pics!:)

I have been watching this woman's videos on YouTube for about two months now, and aside from being a phenomenal source of beauty and fashion tips, she has a number of inspirational videos. Just listening to her story and watching her happy, upbeat videos make my day. Reading her blog is a must!

And the hunting begins


So, we're moving to Henderson, TN. And by moving, I don't mean in like the nebulous region of next month or down the road. I mean, we are going up there this weekend to hunt for a house. No kidding here, kids.
David got a call from his boss at the hospice asking if we would be able to relocate, so that he could be more on the nursing side of the hospice region up there. Well, we hadn't really planned to get any farther away from Columbus (We both love it there.) for now, but That's Life. It's better to be nursing in another state than not nursing at all in your home state.
Anyway...The housing market looks good up there on paper. The rent is pretty cheap, and there seem to be a lot of options. We'll definitely be wanting a house. We're ready for that. We've got the two dogs and a cat, and they need room to run around. We also are ready to not be sharing a wall, a floor, a yard, an anything with people. Not that we're not social!
In the midst of this, I did get a change to go down to Columbus yesterday and see some friends and sisters! I hung out with my #2 Reveler Shannon, and as usual she played mommy. Thanks for the sloppy joe, Shan! I saw the Jesters march, and I'll upload a few photos of that. I ended up hanging out on Reveler hall with Brooke (Reveler) and Amber (BL), and I love them both! I also got the change to visit some really cool girls! ;)

Long time no see...


Okay, so it has been quite some time since I sat down to a blog and actually kept up with it. Since I'm no longer working for "Corporate America," I'm going to do my best to take this time to really put effort into a blog:

My husband and I are doing a lot of really cool things these days like going off on adventures around Mississippi and gardening in our own backyard, so I'm pretty excited to take you along with me, whomever you may be. I've recently (read: unemployed) renewed my love of photography, so I've been toting my camera around with me a lot more now than I used to. I snapped this picture at a local park in Tupelo a couple weeks ago. I hope to be able to post more of my photos and gain a little feedback from all of you.
